VEGAN PUMPKIN PANELLETS
This pumpkin season we have decided to use one of our pumpkins (of the sweet baked variety) to make our homemade, vegan and healthy panellets to enjoy with the family.
Ingredients:
- 250g pumpkin
- 1/2 orange (juice and zest)
- 200g ground almonds
- 100g Cal Valls rice molasses
For the 3 mixtures:
- 2 tsp. pure cocoa
- 100g Call Valls grated coconut
- 40g Call Valls peeled pine nuts
- Almond crunch or any other topping you like.
Preparation:
1- Roast the pumpkin in the oven with the juice of half an orange.
2- When cooked, puree and leave to cool.
3- Mix the puree with the rest of the ingredients for the dough.
4- Set aside in a covered bowl and leave in the fridge until the next day.
5- Divide the dough into 3 portions.
6- Mix one with 50 g coconut + cocoa, roll into balls and decorate with coconut.
7- Make small balls with the other 2 portions. Decorate one with pine nuts and the other with almonds.
8- Bake in the oven at 210º for 15 minutes.
Leave to cool...and enjoy!
