SANT JOAN’S ANGEL HAIR PASTRY

Do you have everything ready for the eve of Sant Joan? One thing that simply can’t be missing is the traditional Sant Joan’s coca! And with our organic angel hair filling, perfect for bakers and pastry chefs, it turns out delicious. With the 2.5 kg pack, you can make up to eight pastries.

 

Ingredients:

 

· 2 sheets of puff pastry

· 350 g of Cal Valls organic angel hair

· 50 g sliced almonds

· Icing sugar and regular sugar for sprinkling

· 1 egg for brushing

 

Preparation:

 

1. Place one sheet of puff pastry on a baking tray lined with parchment paper.

2. Spread the angel hair filling over it, leaving a small border around the edges.

3. Brush the edges with a little beaten egg.

4. Cover with the second sheet of puff pastry.

5. Make some small perforations in the surface with a fork and make sure the edges are well sealed.

6. Brush with the remaining beaten egg, add the sliced almonds, and sprinkle with regular sugar.

7. Bake at 190° for about 25-30 min.

8. Sprinkle with icing sugar.
