WHITE BEAN BURGERS
Looking for a good dose of a plant-based protein? These white bean burgers are sure to become a favourite!
Ingredients:
· 1 medium carrot
· 1 leek
· 1 medium red onion
· Mushrooms
· 2 cloves Cal Valls black garlic
· 350 g Cal Valls white beans (small jar)
· 1/2 cup oats
· Fresh parsley
· Salt, pepper and spices to taste
Preparation:
- Chop the leek, red onion, garlic and mushrooms. Sauté them in a pan with a drizzle of oil, seasoning with salt, pepper and your favourite spices.
- Grate the carrot. When the vegetables are nearly cooked, add the carrot and the white beans to the pan and cook for a few more minutes. Remove from the heat and allow to cool.
- In a bowl, grind ¼ cup of oats into a fine flour.
- Add the cooked vegetable mixture to the bowl with the oat flour and blend until well combined.
- Transfer the mixture to a large dish and stir in the remaining whole oats and a little chopped parsley.
- Mix thoroughly and refrigerate for a couple of hours to achieve the desired consistency.
- Using your hands, shape portions into burger patties. You should get about 8 units.
- Heat some oil in a pan and cook the burgers.
