VEGAN TRUFFLES WITH NUTS

We are back with our “3 Recipes to Take Care of Your Brain” series Cooking for our Memory, brought to you by our friend, nutritionist Anna Paré! Today, it is time for these amazing vegan date and cocoa truffles with nuts.

 

Ingredients:

· 125 g raw Cal Valls almonds

· 200 g Cal Valls pitted dates, soaked for 4h

· 2 tbsp. melted coconut oil

· 2 tbsp. cocoa powder

· Cal Valls pistachios, finely grounded

 

Preparation:

 

1. Blend the almonds for a few seconds.

2. Add the drained dates, cocoa powder, and coconut oil, and blend until you get a smooth, sticky dough.

3. Chill the dough in the refrigerator for a few hours, then roll it into truffle-sized balls.

4. Coat the balls in the ground pistachios.
