Citrus loaf

This vegan citrus loaf, sweetened with our rice syrup, is perfect to welcome the spring!

 

INGREDIENTS:

 

· 1 cup whole spelt flour

· 1 cup buckwheat flour

· 3 tbsp rice syrup

· 3/4 cup oat milk

· 1 natural soya yoghurt

· 1/8 cup melted coconut oil

· 1/4 cup fresh lemon juice

· 1/4 tsp salt

· 1/2 tsp baking powder

· 1/2 tsp baking soda

· Few lemon slices for topping

 

PREPARATION:

 

1- Preheat your oven to 180°C

2- In a large bowl, mix together spelt flour, buckwheat flour, baking powder, soda and salt.

3- Mix the rice syrup, soya yoghurt, milk melted coconut oil, and lemon juice & mix until well combined.

4- Pour the batter into the prepared lined loaf pan & bake for 40 minutes.

5- Open the oven, place the lemon slices on the top & bake for further 10 minutes or until a toothpick inserted into the centre comes out clean.
