White Bean Homemade Gnocchi
Here's a very creative way to enjoy legumes at home!
INGREDIENTS:
· 400 g cooked white beans from Cal Valls
· 200 g oat flour
· 1 tbsp. salt
· 1/2 tsp. nutmeg
· 1 egg yolk (optional)
PREPARATION:
1- Drain and puree the beans in a food processor until smooth.
2- Add the salt, nutmeg (and yolk, optional) and mix well.
3- Pour the mixture onto a clean, floured surface, and gradually add the flour while kneading with your hands until you form a smooth and tender dough.
4- Divide the dough into 4 balls, and shape long cylindrical strips with your hands. Use a knife to cut each strip into pieces about 1.5 cm long and give them the characteristic gnocchi shape using a fork.
5- Next, boil them in a pot with plenty of water and a handful of salt for about 3-4 minutes, or until they start to rise to the surface. Remove them with a slotted spoon.
You can now combine them with your favorite sauce! You can make a quick sauce with: EVOO, black garlic and sautéed cherry tomatoes with a little agave syrup, toasted pine nuts, and some fresh spinach leaves. Delicious!
...Or you can add one of our sauces, such as tomato and basil, tomato with mushrooms, with green olives, or even spicy tomato.
