The raw material comes mainly from our crops, but also from other peasant’s fields. Our policy is to know the origin of the products and the people who grow them, as well as to control that the product is certified according to the Organic Farming.
The process of elaboration is as important as the growing, since its main objective, apart from preserving the food longer, is that of not to alter the nutritious and organoleptic qualities of the product.
In
we have the facilities, a building of about 3000 m2, to produce the juices and vegetal preserves in our own town, Vilanova de Bellpuig.
Our system of elaboration is based on the skill of preserving the food in the natural way it was done time ago in the cottages and farmhouses, as it was done in the Valls family.
The processes of elaboration, the ingredients, the additives that can be used in the production of food coming from the organic farming are regulated by the CCPAE, with regard to the rules of the Organic Farming of the European Union. Thus, according to these regulations, only 34 food additives out of the 250 authorised in Spain can be used in the production of organic food. We only use two: the agar-agar – a seaweed- and the pectin – the dry skin of the apples and the dry peel of the oranges for the manufacture of jam.
Demeter-International regulates as well all the aspects of the production, and the regulations are, in most cases, much stricter than the European ones.
Our production is a craft work; we take care over it with the only objective of achieving a product of the very best quality. Most of the products are produced only during the harvest time. Almost all our products are packed into glass containers.
All the organic remains produced by the firm are entirely destined for the compost and fertilisation of the fields.
Nowadays we have over 50 different products, and almost 1,000,000 bottles and jars are produced a year. Over 80% of our products are from Ecological Agriculture.
“Cal Valls” delivers around 40-50 fresh products (fruit and vegetables) from Organic Farming. Most products are grown in “Cal Valls” fields. Most fruit and vegetables are sold in Catalonia markets and shops.
The commercialisation of the bottled and jarred products makes up the most important part in “Cal Valls” because some of them, like the Apple Juice or the Whole Peeled Tomato, have been produced for over 25 years.
75% of the juices and vegetal preserves are sold in Spain. The other 25% is exported mainly to Germany, the USA and France.
