The Arbequina Olives come from Les Garrigues, a neighbouring region.
It is an olive characterised by its tiny size and its mild taste. The olive oil with the lowest acidity is extracted from these olives and it is internationally known for its quality.

The ones we select and use for the consumption have been handy and carefully picked just when they started to colour.
As regard Black Olives twe also pick handy those which are ripe. They come from Aragón and Catalonia.

The Manzanilla Olives, of those that are grown in the South of Spain, are the best variety for consumption thanks to their intense and a bit bitter taste. Their picking is also handy and starts when the olive is about to change its green colour, for the green olive, or when it is ripe, for the purple olive (morada).
If you prefer the big olives, you must taste our Gordal olives.
For their preparation, several herbs are used, such as thyme, savory and fennel, as well as laurel, garlic and lemon.
